Banana-Chocolate Chip Muffins



I whipped these up with my daughter, along with two other kinds of muffins to send to the office with my husband, which I will be posting soon. We used a basic cream cheese icing, by combining powdered sugar (1/2 a bag), 1 box cream cheese, and 1 stick butter, with a teaspoon vanilla, and 1/2 teaspoon cardamom, which gives it that extra little kick! Enjoy.....

Chocolate-Chip-Banana Muffins

**This makes about 2 1/2 dozen

2 & ¼ cup flour

1 & ¼ teaspoon baking soda

1 & ¼ teaspoon baking powder

¼ teaspoon salt

1 tablespoon vanilla

1 cup brown sugar

1 cup white sugar

2 eggs

2 sticks butter-room temperature

4 ripe bananas

1/2 bag (6 oz.) semi-sweet chocolate chips

Directions:

Cream butter and sugar together, add eggs and vanilla, then beat on low. Add all dry ingredients together, excluding chocolate chips, and bananas. Mash bananas. Mix wet and dry ingredients together, then add bananas, beating on a low speed until combined. Fold in chocolate chips.

Bake at 350 degrees, for around 20 minutes, checking frequently.

  2. Nothing like waking up to see these muffins on the table for breakfast. Any baked good with bananas is always welcome in this house-thanks for sharing!
