Bruschetta

I made this for dinner last night...YES, this was all we ate! Along with a glad of red wine, you can't go wrong with a light, healthy summer dinner!



Bruschetta


3-4 medium sized tomatoes-diced

1 small clove Garlic-minced

½ cup julienned fresh sweet Basil

¼ cup extra virgin Olive oil

Natures Seasoning-to taste

1 French baguette-sliced in ½ inch slices in a diagonal directional slant

Grated Parmesan (for topping)

Directions:

Heat toaster oven to broil, or oven to 375 degrees.

Dice tomatoes and add to a medium size mixing bowl. Mince garlic, and add basil. Top with olive oil. Add salt and pepper, or Natures Seasoning. Mix well and let sit for about 10 minutes to allow flavors to marinate.

Slice bread into thin slices. Brush one side of bread with olive oil. Place oiled side down on a baking sheet with holes (so that the bottom gets toasted). Toast for about 3 minutes. Remove.

Top each piece of toast with a small spoonful of tomato mixture, taking care not to add the juice (or the toast will become soggy). Top with grated Parmesan cheese. Increase oven temperature to 450. Toast for an additional 3 minutes, or until the desired crispness. I like my toast hard and crispy, but I realize that not everyone else does. Feel free to adjust the oven temps., and doneness based upon your own preference.
